Although this recipe reminds me of autumn, it will leave you hungering for it year round. Delicious and tasty, especially for those with a sweet tooth, this is one vegetable that I think even the kids will like. Ingredients: 2 cups of butternut squash, hot and mashed 2-1/2 tablespoons of butter, melted 3/4 cup of sugar 1/2 teaspoon of nutmeg 1/4 teaspoon of salt 3/4 teaspoon of cinnamon 2 eggs 1/4 cup of brown sugar 1/2 cup of mini marshmallows 1. Stir the melted butter into the squash. 2. Beat in the sugar, salt, nutmeg, cinnamon until it is blended and smooth. 3. Beat in the eggs thoroughly. 4. Spoon into a greased baking dish. 5. Bake at 350 degrees for approximately 20 minutes. 6. Take out and sprinkle brown sugar and marshmallows over the top. This recipe will serve approximately 6 to 8 people.
